The noodles in our ramen come from a Cleveland pasta maker you may know from the West Side Market.

Gary Thomas started Ohio City Pasta to supply fresh pasta to restaurants. The company began as a one-person operation and has had a stand at the West Side Market since 1991.
Its range goes well beyond a bag of spaghetti: flat-cut pasta, ravioli, gnocchi, pierogi and sauces. Ramen, lo mein and udon also appear in its fresh-cut lineup.
From their noodles to our bowl
Ohio City Pasta makes the fresh ramen noodles we serve at Ninja City. We pair them with our pork-bone broth, cooked over two days, then add the seasoning and toppings for the bowl you order.
For Tonkotsu, that means braised pork chashu, corn, half a soy egg and mild house togarashi oil, with sprouts, scallions, sesame and nori. The noodles are one locally made part of that bowl.
