Chili, sesame and more
Togarashi means chili pepper in Japanese. On a menu, it often refers to a chili-based seasoning blend. Shichimi togarashi is the familiar seven-spice version.
The blend varies by maker. S&B’s Nanami Togarashi, for example, combines chili with orange peel, black and white sesame, Japanese pepper, ginger and seaweed. The chili brings heat; the other ingredients add citrus aroma, nuttiness and savory flavor.
Where we use it
Togarashi Tots: our house seasoning over crispy tots, with ginger ketchup for dipping.
Spicy Mac: togarashi and scallions over our three-cheese smoked gouda mac.
Tonkotsu: mild house togarashi oil finishes the pork broth.
How spicy is it?
It depends on the blend and how much goes into the food. Togarashi can be spicy. The word doesn’t promise a mild dish.
We call the togarashi oil in our Tonkotsu mild. Our Spicy Mac is a different dish with its own heat. If you want to get to know the dry seasoning, try a tot before dipping it in the ginger ketchup.
